Favorite Side Dish Recipes

Puréed Butternut Squash
Serves 6
1 1/2 lbs. Butternut Squash, peeled and chopped
3 Tbsp. Butter
1 1/2 tsp. Fresh Nutmeg
2 tsp. Cinnamon
1 Tbsp. Brown Sugar
Salt & Pepper to taste.
Boil the squash until soft. Drain well and place
into a mixer. Add the rest of the ingredients and whip until they are
almost Smooth. Adjust seasonings and serve.
