Chef Don's Favorite Cape Cod Seafood Recipes

CAPE COD SEAFOOD


Stuffed Cod
Serves 4

4-6 oz. fillets of Cod                       
4 oz. Scallops, chopped       
1 cup Cracker Crumbs                   
2 Tbsp. Shallots, chopped       
4 oz. Baby Spinach                       
1 Tbsp. Garlic
1/2 Lemon Juiced                       
2 Tbsp. White Wine           
1-2 Tbsp. Butter, melted                   
1/4 cup Parmesan, shredded   
1 Tbsp. Olive Oil                       
Salt and Pepper to taste


   Preheat oven to 350°. Heat the oil in a pan until hot. Add the shallots and sauté until opaque. Add the scallops and sauté for 2-3 minutes. Add the garlic and stir. Add the spinach, juice and wine and cook until the spinach has wilted. Remove from the heat and add the crumbs and butter. Mix well and add the parmesan and season with salt and pepper. Let cool. Meanwhile butterfly each fillet and place into a baking dish. Stuff each fillet and close. Bake for 20-30 minutes or until the fish is thoroughly cooked. Remove from the oven and serve immediately.




 

 


   
Citrus Dill Butter
Serves 4

1 Stick Unsalted Butter, softened              
1/2 Lemon Juiced   

1/2 Orange Juiced                       
2 tsp. Lemon Zest               

2 tsp. Orange Zest                      
2 tsp. Dill, chopped

Salt and Pepper to taste


   Mix all ingredients in a bowl. Roll or pipe the butter and chill.
