Chef Don's Favorite Cape Cod Seafood Recipes

CAPE COD SEAFOOD


Sushi

California Roll
Yield: 6-8 piece

1 sheet Nori                           
1 cup Sushi Rice
2-3 oz. Cucumber, thin strips                   
2-3 oz. Crab Meat
2-3 oz. Avocado, thin strips                   
2 tsp. Toasted Sesame Seeds


    Lay the nori on a rolling mat, shiny side down. Spread the rice on the nori, leaving 1/2 inch on one side. Do not pack the rice. Also do not use too much rice, if you do not need the whole cup don’t use it. Place a piece of plastic wrap on the rice and turn over. Place the crab onto the rice. Place the avocado onto the crab. Finally stack the cucumber next to the crab. Start to roll up the sushi using medium pressure. Remove the roll from the mat and slice into pieces. Remember to moisten the knife between each cut to prevent sticking. Serve with Soy Sauce, Wasabi, Sunomono and pickled Ginger.

 

 

 

Tuna-Maguro
Yield: 8 Pieces

8 Slices Raw Tuna, 1”x2”                  
 4 tsp. Wasabi
Sushi Rice


    Hold the tuna in one hand and spread 1/2 tsp. of wasabi on each tuna. Pick up a mound of rice with your free hand and place it into the tuna. Form the tuna around the rice and serve with appropriate condiments.

 
 
 
Sushi Rice

6 oz. Sushi Rice                       
8 oz. Water
1 1/2 Tbsp. Rice Wine Vinegar                   
1 Tbsp. Sugar
1 tsp. Salt


    Wash the rice until the water runs clear. Let sit for 30 minutes. Put the rice and water into a heavy pot with a tight fitting lid. Bring to a boil over medium-high heat. Cover and simmer for 10 minutes. Do not lift the lid! Remove from the heat. Take off the lid and cover with a towel. Mix the vinegar, sugar and salt in a pan and heat until the sugar dissolves. Pour the vinegar into a cool bowl and place into the freezer to cool. Using a wooden paddle remove the rice from the pot into a bowl. Spread it out and run the paddle through the rice, first from side to side then from top to bottom. Continue cutting the rice adding a little vinegar at a time. Do not mush or stir the rice. At the same time fan the rice to cool it to room temperature. as you cut it. This should take about 10 minutes.
