Favorite Side Dish Recipes

Candied Sweet Potatoes
Serves 6
2 Lbs. Sweet Potatoes Boiled, peeled and sliced
1 cup Brown Sugar
4 Tbsp. Butter
Juice of 1/2 Large Orange
1/4 cup Honey
1/4 Cup Rum or Bourbon
1/4 cup Pecans, toasted and chopped
Cinnamon to taste
Nutmeg to taste
Pinch Salt
Melt the butter in a large sauce pan. Stir in 3/4 of the
brown sugar, all of the honey and juice. Add the liquor and flame.
Season with the spices. Remove from heat. In a casserole dish layer
some potatoes and pour some sauce over them. Repeat until all the
potatoes and sauce are used. Sprinkle the top with pecans and the rest
of the brown sugar. Bake at 350° for 30 minutes.
