Favorite Side Dish Recipes

Sweet Potato and Caramelized Onion Mash
Serves 4
1 lb. Sweet Potatoes
4 oz. Onion, diced
4 cloves Garlic, sliced
2 oz. Butter, fresh
1/4 cup Heavy Cream
1 tsp. Nutmeg, grated
2 tsp. Fresh Thyme, chopped
2 Tbsp. Olive Oil
Salt and Pepper to taste
Dice the sweet potatoes and boil until soft. While the
potatoes are boiling heat the oil to the smoking point and add the
onion. Sauté the onion until it is brown and add the garlic.
Cook until the onion and Garlic are well browned. Remove from the heat.
When the potatoes are done remove them from the heat and drain. return
them to the pot with the butter and onion mixture and mash. Add the
rest of the ingredients and combine well. Serve.
