Favorite Sauce and Pesto Recipes

Rustic Tomato and Garlic Sauce
1 cup Roma Tomatoes, chopped
1 1/2 Tbsp. Garlic, sliced
2 Tbsp. Onion, chopped
2 tsp. Fresh Basil, chopped
2 tsp. Fresh Oregano, Chopped
1 tsp. Fennel Seed, ground
Sugar if needed
Salt and Pepper to taste
Heat about two tablespoons of oil in a sauté pan. Add the onion
and sauté until opaque. Add the garlic and sauté for 2-3
minutes. Add the tomatoes and cook for 3-4 minutes. Add the spices and
cook for 2-3 minutes. Remove from the heat and store or serve.
