Chef Don's Favorite Cape Cod Seafood Recipes

CAPE COD SEAFOOD


Sesame Crusted Tuna Carpaccio
Serves 6

1 lb. Ahi Tuna                       
1 tsp. Soy Sauce
1 tsp. Lemon Juice                       
1/2 cup Sesame Seeds            
Pepper to taste                           
Oil as needed

    Trim the tuna to a rectangle shape. Mix together the lemon juice and the soy sauce. Brush the tuna with the soy mixture. Roll in the sesame seeds. Heat the oil in a pan over medium–high heat until hot. Sear each side of the tuna until the seeds are a light golden brown, about 30 seconds per side. Remove from the heat and let cool. Using a very sharp knife slice the tuna thin. Arrange on a plate with the soy aioli and the cucumber and ginger salad. 
 

 

 

Soy Aioli
Yield: 1 cup

1/3 cup Soy sauce, reduced to 2 Tbsp.           
1 Egg yolk
1 tsp. Garlic, minced                        
1 Tbsp. Lemon Juice
1/2 tsp. Dry mustard                       
3/4 cup Olive Oil

    Combine all the ingredients except for the oil in a food processor and beat until foamy. While the food processor is running add the oil in a slow but steady stream until a thick mayonnaise has formed. Chill and serve.
 
 
 
Cucumber and Ginger Salad
Serves 6

Dressing                   
1 tsp. Sesame Oil                        
2 Tbsp. Rice Wine Vinegar
1 Tbsp. Soy Sauce                        
1 tsp. Sugar
1 tsp. Thai Chili, sliced

Salad
1 cup English Cucumber, julienne                
1/2 cup Alfalfa Sprouts
1/4 cup Pickled Ginger, julienne               
1/4 cup Red Onion, fine julienne
4 Scallions, sliced on the bias                
1 Tbsp. Cilantro, whole leaves


    Combine all of the dressing ingredients in a bowl and refrigerate until service. At service time
combine all of the salad ingredients in a bowl. Add the dressing and combine. Serve immediately.
