Favorite Sauce, Pesto & Salsa Recipes

Yellow Pepper and Mango Coulis
Serves 6
1 Yellow Pepper, halved and seeded
1 Mango, sliced
4 oz. Onion, sliced
1 cup Chicken Stock
1/4 cup White Wine
3/4 cup Heavy Cream
juice of 1 Lemon
juice of 1 Lime
2 tsp. Fresh Dill, chopped
Salt and Pepper to taste
Roast or grill the onion, mango and pepper until well
browned. Add to a food processor with the white wine and puree. Put the
puree into a pot with the rest of the ingredients and bring to a boil.
Reduce heat and simmer until the sauce has thickened, about 15-20
minutes. Remove from the heat and serve.
