INGREDIENTS

3 1/2 cups diced peeled peaches (appr. 2 1/2 lbs)

1/4 cup diced red onion

2 tablespoons finely chopped fresh cilantro

1 tablespoon minced seeded jalapeño pepper

2 tablespoons rice vinegar

1 teaspoon lemon juice

1 garlic clove, minced

 

Combine all ingredients in a bowl, and stir well. Cover and chill.

 

Delicious on top of grilled shrimp or swordfish!
